Personally, I like it best when tomatillos are roasted because it adds some toasty, caramelized flavors that are really tasty!

Is it better to boil or roast tomatillos?

The most authentic salsa verde features boiled tomatillos. This creates a bright, acidic flavor that goes great with steak and other meaty flavors.

But personally, I like roasting tomatillos better. It creates a deeper, more complex flavor and cools down some of the acidity. And it helps add interest to simple meals like rice and beans.

Storage

Making homemade salsa is one of my favorite ways to meal prep easy vegetables. Store your homemade salsa verde in an airtight container in the refrigerator for up to 3-5 days for freshness.

While the flavors may intensify over time, the salsa will be good to use for up to 5 days if stored properly in the refrigerator. 

Tips for success

  • Cut the ingredients in half (except for the garlic cloves) before placing on the baking sheet. This gives more surface area for charring and caramelization, and cuts down on the cooking time.

  • You want light charring on the edges of the vegetables. This should take about 5 minutes under the broiler. If you plan to go much longer than this, you may need to take out the garlic cloves earlier to avoid them completely burning.
  • I like to line my baking sheet with foil to make for easier clean up.

Ingredients

Main Ingredients

  • 5 tomatillos husks removed
  • 1 jalapeño
  • 2 garlic clove peeled
  • 0.25 tsp salt
  • 1/4 onion peeled

Instructions

Recipe Steps

  • Turn broiler on (or heat oven to 450 degrees Fahrenheit)
  • Prepare the vegetables: Peel garlic cloves, peel the onion, peel the tomatillos, and cut the stem off the jalapeño. Cut jalapeño in half length-wise and cut tomatillos in half.
  • Place tomatillo halves, jalapeños, quarter onion, garlic cloves in an oven safe dish or on a baking sheet.
  • Place baking sheet with vegetables under the broiler (or in the oven).
    5 tomatillos, 1 jalapeño, 2 garlic clove, 1/4 onion
  • Broil until skin is blistered, approximately 5 minutes (it will take longer if you are just using the oven).
  • Remove from broiler. Place ingredients into blender.
  • Puree on high for 30 seconds until completely smooth, There may still be tomatillo seeds giving texture to the salsa.
    0.25 tsp salt
  • Taste and adjust for salt.
