What I mean when I say that is it’s my go-to lunch–I don’t have to think too hard about it, it takes 5 minutes, and it meets my basic nutrition needs for lunch.
I also like to make tostadas when I have leftover tortillas.

Time-Saving Tips
I’ve been thinking a lot about how I can help my fellow Latinos feel more comfortable with meal planning, without sacrificing our favorite cultural foods.
And I think this avocado tostada demonstrates a major strategy I use–you can meal prep by having all the ingredients on hand to throw a meal together in 5 minutes.
You don’t necessarily have to make every single meal ahead of time. So for this avocado tostada I pre-cooked the chicken and the salsa. Everything else, I just had ready to go in my kitchen. When it came time to eat lunch, it took me 5 minutes.
If you want to save even more time, you can make this tostada with mostly store-bought ingredients. Consider buying these ingredients prepared to save the most time:
- Buy a cooked rotisserie chicken or pre-cooked shredded chicken.
- Buy storebought salsa
You can also save time by serving the chicken cold. Since it’s pre-cooked, you don’t have to reheat the chicken if you don’t want to. I like it warmed up on my comal first, but that’s totally up to you.

Avocado Tostada with Chicken Recipe
Avocado Tostada with Chicken

- 2 tostadas
- 1/2 cup cooked chicken shredded is best
- 0.5 avocado peel and pit removed
- Pinch of salt
- 1 tbsp lime juice or to taste
- ½ roma tomato sliced
- 2 tablespoons salsa
Instructions
Instructions
- Optional: Reheat the chicken on a comal or griddle
- Scoop the avocado into a bowl, discarding the pit and peel.
- Add the salt and lime to the bowl with the avocado. Mash the avocado with a fork.
- Spread the avocado evenly on the tostadas
- Place two tomato slices on each tostada
- Top the tostadas with the chicken
- Drizzle 1 tablespoon of salsa over each tostada
