Why you should eat breakfast
Iāve been a dietitian for over 5 years now. So I can confidently say that the vast (vast) majority of my clients who say theyāre not breakfast people, still feel better after they start eating breakfast.
Eating breakfast can help regulate blood sugar for the rest of the day (1). And people who eat breakfast tend to eat less sugar at night (2).Ā
But I get it. A lot of people are super rushed in the mornings, or are naturally less hungry in the mornings.
You donāt have to eat a huge, elaborate breakfast to get the benefits. Something small with at least a serving of protein is a great start!

The Best Healthy Mexican Breakfasts
- Huevos ahogados: Donāt forget that salsa can count toward your vegetable servings! Huevos ahogados is a simple egg dish that you can put together in 5-10 minutes if you already have salsa. Serve with corn tortillas for a complete breakfast.Ā
- Huevos rancheros: Huevos rancheros pair corn tortillas and eggs with refried beans, adding even more protein and fiber.Ā
- Breakfast tacos: you really canāt go wrong with an egg + tortilla combo. Serve breakfast tacos with avocado slices and salsa to get your veggies in!
- Bionicos: Bionicos are the Mexican street food answer to yogurt parfaits! Pair yogurt and crema with chopped fruit for an easy, nutritious breakfast.Ā
- Huevos con nopales: Nopales are one of my favorite Mexican vegetables! One of the easiest ways to enjoy the health benefits of nopales is to add them to a simple egg scramble.Ā
- Chilaquiles: Whether you prefer your chilaquiles with eggs, chicken, or beef, you get a hearty combo of protein, carbs, and fiber. Add plenty of salsa to get your veggies in!
- Molletes: One of my personal favorites, molletes are open face sandwiches topped with refried beans, cheese, and various veggies. An easy, no-fuss breakfast that checks off all the nutrition requirements to start your day right!
- Nopal smoothie: Nopal makes a great addition to a smoothie, with its tangy flavor. My personal favorite nopal smoothie recipe isnāt quite enough for a full breakfast. Consider adding an extra protein!
- Banana licuado with cinnamon: If you want a more robust smoothie, check out my banana licuado with cinnamon. This high protein smoothie is quick to make, tasty, and has enough protein to hold you over until lunchtime.Ā
